How to order pho in Vietnam: rare, well-done, flank, brisket, tendon, chicken pho, extras, how Hanoi pho differs from southern pho, and finding a shop.

· 3 min read · phongon.vn

Hanoi pho is known for its clear, fragrant broth, soft noodles and thinly sliced beef. Yet many first-time visitors freeze when they hear regulars order "tai nam", "chin gau" or "nuoc beo". This guide explains the words you will see on the menu, how to order the bowl you want, how northern and southern pho differ, and how to find a pho shop near you.

The cuts of beef in pho

On the menuWhat it isGood if you like
TaiThin slices of raw beef, cooked by the boiling brothTender, sweet meat
ChinBoiled beef, slicedFully cooked meat
NamFlank with thin sinew, pleasantly chewyA bit of crunch
GauFatty brisket with a crisp layer of fatRich flavour
GanBeef tendon simmered until soft and stickyA gelatinous chew
SachBeef tripe, sliced thinA crunchy texture

You can combine cuts, such as tai nam (rare and flank) or chin gau (well-done and brisket), or ask for the "dac biet" special at many shops to get a bit of everything.

How to order pho like a local

  • Nuoc beo or nuoc trong: fatty broth is richer; clear broth is lighter.
  • Trung chan: an egg poached in the hot broth, offered at many shops.
  • Quay: fried dough sticks to dunk in the broth.
  • Fewer noodles, more spring onion: just ask when you order.
  • Pho ga: chicken pho with sliced or shredded chicken; some shops add giblets or unlaid eggs.

How Hanoi pho differs from southern pho

In Hanoi, pho usually comes with spring onion, sliced onion, coriander, lime, chilli and garlic vinegar, with few fresh greens. In the south, pho tends to arrive with a plate of bean sprouts, Thai basil and sawtooth herb, plus hoisin and chilli sauce to add yourself, and the broth is sometimes sweeter. Neither is more authentic; it is regional taste. There is also Nam Dinh pho, with its own noodles and style, and dishes made from pho noodles such as pho rolls, stir-fried pho and puffed fried pho.

How to spot a good pho shop

  • A big pot of broth kept at a gentle simmer, smelling of bones and a hint of spice.
  • Rare beef sliced to order, thin and even; cooked beef cut from a still-warm piece.
  • Noodles that are soft, not sour and not falling apart.
  • Clean tables, chopsticks, spoons and herbs, with separate tools for raw and cooked food.
  • Busy in the morning; many shops close once the pot is empty.

Table condiments: how much to add

A Hanoi pho table usually holds lime or kumquat, fresh chilli, chilli sauce, garlic vinegar and pepper. Pho lovers taste a spoonful of broth first and only then add a little at a time, because the broth is already seasoned. Garlic vinegar suits well-done beef and flank and cuts the richness; go easy on lime so it does not mask the cinnamon and star anise. In southern shops, hoisin and chilli sauce are often squeezed into a small dish for dipping the meat rather than poured into the bowl. Condiments are a matter of taste and there is no wrong way, but tasting first is always a good habit.

The best time to eat pho

Early morning is when the broth has just finished simmering, the cooked beef is freshly lifted out and the noodles are at their best. Many shops are busiest from about six to eight in the morning; arrive later and the brisket, the flank or even the broth itself may be gone. Evening and late-night pho can still be found in big cities, handy for people on late shifts. To be sure, call ahead and ask about opening hours and what is left.

Making rare beef pho at home

The secret to beautiful rare slices is a sharp knife and chilled, firm beef. Slice across the grain, as thin as you can. A thin slicing knife and a solid board are all you need; see knives and chopping boards. For the broth itself, read how to make beef pho at home.
